Dietetics Reunion- Hawaii
Annalise and Danielle flew out to visit me in late June. After graduating from the BYU Dietetics program we ALL deserved a sunny break in Hawaii. We spent most of our time at the beach, soaking up some sun and paddle boarding. We hiked a waterfall and did some swap meet shopping. We also ate at all the best places. Matsumoto's shave ice, Ted's bakery, Shrimp truck, Malasadas, Haleiwa Eats. We had a blast, and decided it was the start of a new tradition for us.

I Heart Hawaii
So here's what's going on with us. After we unofficially graduated (meaning we only walked and won't receive our actual diplomas until August 25), we decided we deserved a little break! So why not move back to where it all started. Hawaii.
Michael and I met at BYU Hawaii January 2008 and we haven't been back since our whirl wind romance began. Since I am applying for a Dietetics Internship that would start in January and Michael is applying for Law school to start Fall 2012, we thought this would be the best time to come back to Hawaii.
We've been living here almost 3 months and are loving it! We can't remember why we ever left...
One of the first things on our To-Do list upon arriving was buying car. We got a great deal on a classic. We bought a 1981 (yes the car was built before I was born) Nissan Datsun. It only has 66,000 miles on it! It even has automatic locks and an automatic sun roof. We LOVE it!
Michael has found the best gig possible for our time here. He's selling security systems for a local company, but gets to sell whenever he wants to. He leaves for work around 2:00pm and comes home when he gets a sale. His schedule is great since he can surf before he goes to work or surf all day if the waves are amazing. In the Fall Michael will be taking the LSAT and interning for a local law firm.
I am volunteering at the local WIC clinic, getting some more dietetics hours to pad my resume. I will also start volunteering at a couple local hospitals in a couple weeks.

Graduation!

So Michael and I graduated from Brigham Young University last week. It feels like it took forever to get to this point, but it was so much fun getting here. Graduation was mostly really boring besides Elder Scotts talk and walking to get our diplomas.

I graduated with a Bachelors of Science in Dietetics. Michael graduated with a Bachelors of Science in Political Science. Michael also graduted with University Honors. (But he still has to finish his Honors thesis defense in a couple weeks)

It's hard to believe my Dietetics program is over. During my 4 semesters in the program I completed 70 projects and assignments. That averages out to 1.25 assignments or projects a week. But there wasn't usually much due the first few weeks of the semesters so I often had 2 or 3 things due in a week. I couldn't have made it through the program without Annalise (pictured above) and Dani (unfortunately not pictured because she was LATE to meet up before graduation).

We ran into Amy and snagged a quick picture.

Our wonderful families brought tons of leis for us to wear. We had easter egg leis, gum leis, money leis, candy bar leis, and even a fruit and vegetable lei for me.


We were so fortunate to have so much of our family with us to celebrate. Chris and Jackie even came out in the middle of their finals week.

After graduation we all headed to Grandma Blair's house for a party.

Mom went above and beyond decorating the whole place for us.

We played croquet in the front yard. I won the first game and came in last the second.


We had my favorite, Cafe Rio, for dinner. We made coconut and nutella homemade ice cream and had a great time together. WOOHOO!!! We're done!!

Festival of Colors
Last Saturday Annalise and I drove to the Lotus Krishna Temple in Spanish Fork for the annual Holi Festival. Its a festival to celebrate the coming of Spring, the triumph of good over bad, and love. There is music, chanting and dancing. Everyone buys little bags of colored powder to throw in the air (or mostly on each other) to welcome the new season.
Thanks to GPS errors, we were lost for an hour with Annalise singing Justin Bieber the whole time... (I don't think I will ever be able to listen to JB again) There were thousands of people there, young and old alike. It was crazy.

Parkcity
Last weekend we had our annual family ski trip. It was a blast! All original Spencer kids were there. We stayed right near Main Street so we could walk right to the down town lift, and head out on the slopes. We ate at Cafe Rio and saw Rango one night (great movie). It was so fun all being together. Michael was there too, but didn't make it into any of the pictures.

Kelly and I rented skis one day! We both hadn't skied for 10 or so years. We had so much fun! Dad is a great teacher and he loved showing us the ropes.

The girls! We slept in while the boys headed out early and had fun taking a few runs and getting cocoa at the lodge.

One night I made sushi for EVERYONE. I made about twenty rolls... it was a lot of work, but delicious. Dad was my right hand man in charge of the tempura. He did great! The tempura rolls were the hit of the night.


It was a great vacation and didn't last long enough. Now we are counting down to graduation.

Strawberry Florida
Thursday I got to fly home to take a tour of the VA Hospital in Bay Pines Florida. My number one internship site. The interview went well and it was great seeing the facility.
On the way back Mom and I stopped in Plant City, FL. We visited the famous Parkesdale Farm Market to get some of their World Famous Strawberry Shortcake. It was delicious!

I wish I had some more right now!

Fortunately my body waited until the day after my interview to get the flu. So I spent the next two days being fed soup on the couch from my wonderful Mom.
Now I'm back at Provo still sick and trying to get better.

Christmas Trap Shooting
When we were in Florida for Christmas my Dad took us all Trap shooting. I've shot hand guns before but I've never shot our shot guns. I was a little confused at first with the two barrels, double trigger, and safety switch... but I got it after a couple tries. I'm not a great shot. I think out of 50 clays discs I hit 15 or so. I blame the gun. It was too heavy for me. My wrist and arm were killing me, and the next day I was SO sore. But I loved it. I want to get a single barrel shot gun sometime in the future.
